What is nouvelle cuisine? It is, in a word, the marriage of health-conscious California to traditional France. Consider it an updated version of French cuisine- flavorful food with a light-handed, healthy approach. It s difficult to define nouvelle cuisine in more specific terms because of its huge impact on the way food in general is prepared today. Nouvelle cuisine opened doors to a new generation of restaurant-goers who loved rich tastes and fresh combinations, but didn t want their bodies to pay for it later.
With this new lighter menu came a new style of cooking as well. Chefs in nouvelle cuisine restaurants used shorter cooking times and fresher ingredients, cutting down on the multiple steps that got in the way of the natural flavors of the food. In a world that was waking up to faster-moving times and stricter diets, this new cuisine caught on with incredible speed.
Like any other trend, nouvelle cuisine was often widely misunderstood and misrepresented. Depending on what regional restaurant you visited, you might have been subjected to a low-calorie meal with tiny portions and been told it was nouvelle cuisine. Many chefs and consumers alike did not grasp the concept that lighter did not necessarily mean less.
One of the main goals of nouvelle cuisine was to excite more than just the sense of taste. A skilled nouvelle chef would be able to produce a meal that was artistically arranged on the plate and contained a wonderful mix of smells, textures, and flavors. Oils and fresh spices were used extensively to bring out the natural flavor of the fresh vegetables and pastas in these meals.
The way we cook at home today owes a great deal to nouvelle cuisine. Olive oil, vinaigrette, and fresh herbs are common today in many American kitchens, mainly due to the influence of the nouvelle cuisine movement. Restaurants, too, have taken their cue: before the appearance of nouvelle cuisine, portions were heavier and larger, and consumers went to restaurants expecting to come out full, but not necessarily sated. Nowadays fine restaurants base their expertise on combining flavors, not smothering them; and on their presenting food that satisfies, not simply fills, an empty stomach.
There is still a debate on whether nouvelle cuisine has disappeared from the radar. It has certainly influenced other fields of cooking, but nobody is sure if it can be considered a movement of its own in the current times. Then again, a trend that catches on so quickly is almost always destined to develop in other ways and spread to other things, losing its identity as a separate entity along the way.

9. Plastic storage containers such as margarine tubs, take- out containers, whipped topping bowls, and other one-time use containers should not be used in microwave ovens. These containers can warp or melt, possibly causing harmful chemicals to migrate into the food.
10. Microwave plastic wraps, wax paper, cooking bags, parchment paper, and white microwave-safe paper towels should be safe to use. Do not let plastic wrap touch foods during microwaving.

The cuisine of the Western region of China is well-known for its spiciness, but many Western palates overlook the complex interplay of savory, sour, hot and sweet flavors that underlie the fiery spice of the Szechwan pepper and other spices that give the Szechwan cuisine its characteristic burn.
For decades, most of the world was familiar mainly with Cantonese cuisine, and thought of it as Chinese cuisine . In reality, though, China is an enormous country that encompasses nearly every kind of climate imaginable. The amazing variety of foods, spices and climates have led to many distinct styles of Chinese cuisine. Szechwan cuisine, originating in a steamy, sub-tropical climate, includes smoked, pickled and spiced foods, as well as foods spiced with a heavy hand for both preservation and flavor.
While the Szechwan pepper, a fruit that grows in the Chongging province, has always been used in Szechwan cooking, most agree that it wasn t until Christopher Columbus brought the chili back from his travels. Besides the flavors that sear the mouth, Szechwan cooking uses an interplay of flavors to create the full impact of a dish. Hot and Sour Soup, for instance, when prepared properly is neither exclusively hot, nor ultimately sour. Prepared with sorrel, lemongrass, tofu and other spices, its first impression is the heady, rich scent of roast meat and sour lemon. That aroma is belied at the first touch on the tongue the soup is salty first, though not intensely so. The subtle blending of flavors melds, changing in the mouth to mildly sour the sorrel and lemongrass making themselves known. It is not until the mouthful of soup has been swallowed that the fire sets in as the chili oil finally seeps into the taste buds.
This is not unusual for Szechwan cooking. The first mouthful of Kung Pao chicken seldom brings tears to your eyes. It is only as you chew and swallow and take yet another bite that the true heat of the dish begins to assert itself. Double Cooked Spicy Pork seems almost bland at first, with the flavors blending subtly in the background until the intense fire of the chili oil in which the pork is fried suddenly flames in your mouth.
There s more than fire to Szechwan cuisine though. Smoked meats are common, and the smoking often makes use of unusual materials and flavors. Szechwan Tea-Smoked Duck is a delicacy that combines the flavors of citrus and ginger and garlic, juxtaposing them with a long, slow cooking over a fire laced with oolong and green tea leaves. The result is a succulent meat that melts in the mouth and leaves behind a hint of gingered orange.
One tradition of Szechwan cuisine that is becoming more common in the Western world is the Szechwan Hot Pot. Similar to a fondue , a Hot Pot is more an event than a meal. Chunks and slices of raw meat, seafood and vegetables are offered to diners at a table that holds a Hot Pot a pot of chili oil over a flame. Each diner selects their food and dips it in the chili oil until it is cooked. Often, hosts will also offer a pot of simple broth for those guests who prefer a more bland meal, or can t tolerate the spiciness of food fried in chili oil.

How to Make Gooey Grits Cake

I was intrigued when I came across this unusual dessert recipe. Now, ordinarily, I wouldn t think that a dessert containing grits, of all things, would be appealing. But there was a time when I thought rice was a funny choice, too, and I m now a huge fan of rice pudding.
So needless to say, I tried it and surprisingly it wasn t bad. In fact, it was sweet…maybe a little too sweet for some people, but I don t mind.
Here it is:
Grits Cake

1 yellow cake mix
4 eggs
1/2 cup melted butter
1 cup grits
8 oz. pack cream cheese
16 oz. powdered sugar
1 tsp. vanilla

Preheat over 350 degrees farenheit (careful here, ovens may vary. Mine does, a lot!). Mix cake, 2 eggs, butter, and grits in a bowl.
Mix cream cheese, powdered sugar, 2 eggs, and vanilla until smooth and creamy.
Spread first mixture into a 9 x 13 pan. Pour second mixture over cake batter, then bake for 35-45 minutes (once again, ovens may vary).
